Dry sausages are one of the most traditional products of Tuscan butchery. We only use selected cuts and the precious meat of our semi-free range bred pigs, which we butcher when they’re at least 14 months old.

Description

Our dry sausages are precious cold cuts stuffed in a natural gut. Thanks to an accurate, traditional curing, they release the unique aroma that seasonings and Grigio del Casentino meat combine to create. As it is for their fresh “sisters”, the meat is coarsely grounded according to the tradition of the Casentino valley. No tricks: these sausages have no secrets. Our products are healthy and genuine, produced with a special meat that doesn’t need anything but a pinch of spice

Traditionally, dry sausages were just a way to save the fresh sausages left, which were hung up in the kitchen to mature, releasing their enticing aroma. Our sausages are true delicacies for gourmet sandwiches or mixed cold cuts appetizers.

Our cured meats are:

  • Tasty and healthy. Our meat has an incomparable taste because our pigs feed on nature
  • Ethical and sustainable. Our animals are free to move in their natural habitat; we only slaughter pigs that are at least 14-month-old and we use all of their meat
  • Safe, for all. Our products mature in humidity and climate-controlled cellars and are naturally free of gluten, lactose and allergens  
  • Natural. We season our cured products only with spices and herbs, with no preservatives, dyes, nitrite, nitrate, artificial flavorings or thickening agents
