Wild fennel salami

In Italian we call it sbriciolona, which means that it crumbles apart when you cut it. It is an extremely tender cold cut with a short curing – only 50 days – finely ground and seasoned with wild fennel seeds and flowers.

Our sbriciolona is a traditional product. We only cut it by knife – never with the slicer! – and we serve it in thick or very thin slices, so thin they crumble apart. Its taste is more delicate than the classic salami, its texture is extremely tender and the fennel aroma is intense but perfectly balanced with the meat. A true poem, 100% traditional Tuscan. 

For our sbriciolona we only use selected cuts from our semi-free range bred pigs. Flavors blend in every slice and we could use less valuable meat – as many butchers do – or chemical additives to control curing – as a lot of butchers do – and nobody would even notice it. But that’s not how we work: we aim to promote an ethical, sustainable meat consumption, no compromise. Our sbriciolona is the proof we’re right.

Why are our cured meats so special?

Our cured meats are:

  • Tasty and healthy. Our meat has an incomparable taste because our pigs feed on nature
  • Ethical and sustainable. Our animals are free to move in their natural habitat; we only slaughter pigs that are at least 14-month-old and we use all of their meat
  • Safe, for all. Our products mature in humidity and climate-controlled cellars and are naturally free of gluten, lactose and allergens  
  • Natural. We season our cured products only with spices and herbs, with no preservatives, dyes, nitrite, nitrate, artificial flavorings or thickening agents
