There’s one unquestionable rule: for an excellent salami it takes excellent meat. Light years away from the industrial products, for our Grigio del Casentino salami we only use selected meat from our pigs, no tricks or compromises. If the curing does not turn out to be perfect – and it can, since it is an artisanal process – we do not use chemicals to fix what humidity and temperature could not do. 

The fat, about 15% of the total weight, is mostly hand-cut lard, thicker and tastier than the fat contained in meat. The color is genuine and sincere: it is the natural color of meat, with no trace of dyes.

Why are our cured meats so special?

Our cured meats are:

  • Tasty and healthy. Our meat has an incomparable taste because our pigs feed on nature
  • Ethical and sustainable. Our animals are free to move in their natural habitat; we only slaughter pigs that are at least 14-month-old and we use all of their meat
  • Safe, for all. Our products mature in humidity and climate-controlled cellars and are naturally free of gluten, lactose and allergens  
  • Natural. We season our cured products only with spices and herbs, with no preservatives, dyes, nitrite, nitrate, artificial flavorings or thickening agents
