Pork belly is a “striped” cut, in which lean meat alternates with fat in a perfect balance of different flavors and textures. It is obtained from the pig’s side and it has such an intense, rich and tasty flavor it could also come perfectly with no seasoning.

In the pork belly, the lean and the fat are more or less equivalent in weight. The fat is super tasty and so tender it melts in cooking. The lean meat is firm and compact, in variable proportion depending on the season of the butchery: in winter, our pigs have more fat to protect from cold. 

The pork belly is an old cut, ever-present in Tuscan barbecues worthy of their names. The Grigio del Casentino pork belly, though, is excellent for any double-cooking or fusion recipes, because low temperatures maintain all the fat and its tastiness.
