The mission of Grigio del Casentino® is to create a top-quality, short and complete production chain that guarantees not only tastier meat, but also a more sustainable and ethical production for the environment and for the end consumer. Our pigs are raised by the small-scale local farmers we selected, people with whom we built up a virtuous network and who share with us respect for nature, for the ecosystem and for the pigs’ lives following a very natural breeding model.
Moreover, when we slaughter a pig we use all the possible cuts, with no waste. In this way we respect the animal and value the time and the resources necessary to raise it.
Our Grigio del Casentino® pigs are born in our valley and here they are raised, slaughtered and processed. The link between these animals and their territory is close and strong: Grigio del Casentino pigs are part of the local ecosystem as much as nature, with its rhythms and its gifts, is the first “breeder” for the meat we obtain.
Our breeding is extensive, in full respect of the animals and their needs. Our pigs are free to move in the woods and participate in a complete seasonal cycle. For us, this is the only possible breeding, without cages, strains, artificial feeding or drugs except those prescribed by law, in short with nothing more than what nature already offers. And this meat is truly tastier, healthier, ethical and sustainable.
Our breeding is as far as it can be from intensive farming and meat-factories. We firmly believe that these practices are unfair for the animals as well as destructive for the environment. Forcing, taste homologation, overuse of antibiotics can no longer be the methods we produce food with.
Our pigs are free animals in their natural habitat, with a full respect of the territory and with a limited environmental impact. We do not cut down trees, generate particulate dust, poison water or alter the ecosystems. We respect nature and protect it, promoting an alternative model to large production, for a truly eco-sustainable meat consumption.
Grigio del Casentino meat is good and tasty thanks to the lifestyle of the animals, but also to our ethical choices. Our pigs, in fact, are bred without drugs or genetically modified foods.
For our recipes, we do not use preservatives, dyes, artificial flavors or thickeners. All our products are naturally without lactose, gluten and allergens. The organoleptic balance is perfect, the traceability complete.
All our customers have a principle in common: we don’t need to give up the goodness of meat for a completely wrong production model. With our Grigio del Casentino pork meat you can serve good, natural meat, produced in the most logical and fair way.
We aim to foster a meat consumption that respects the animal. That’s why we avoid any waste and we spread the culture of responsibility: if we butcher a pig, we have to use all of its cuts, not just some “selected” parts. The old motto “everything but the oink” is our credo.
Every pork cut should be enhanced because that’s the right thing to do but also because every single cut is a unique, exceptional taste experience. When we slaughter pigs and process their meat, we don’t see noble or poor cuts, everything is a gift of taste and abundance.
