										<content:encoded><![CDATA[<p><b>An ancient recipe, a double recovery</b><span style="font-weight: 400;">: old bread was soaked in broth and leftover meat was blended to create a pâté. A long process that few still have the time to do at home.</span></p>
<p><span style="font-weight: 400;">We have reinterpreted the classic recipe, which traditionally includes chicken livers, replacing them with our Grigio del Casentino® pork liver. Fresh, genuine, and natural ingredients, strictly Italian. </span><b>The production is entirely artisanal </b><span style="font-weight: 400;">but leverages the latest industrial technologies: autoclave sterilization extends the shelf life to 24 months.</span></p>

										<content:encoded><![CDATA[<p><span style="font-weight: 400;">“Peposo” </span><b>originated alongside the Dome of Florence Cathedral</b><span style="font-weight: 400;">. In front of the furnaces where bricks were produced, leftover cuts of not-so-fresh meat were cooked, and the pepper was used to cover the smell.</span></p>
<p><span style="font-weight: 400;">Today, things are very different: our “peposo” is made with meat from the </span><b>pig&#8217;s shanks</b><span style="font-weight: 400;">, a lean cut rich in tendons and cartilage. The </span><b>long, slow cooking at low temperatures</b><span style="font-weight: 400;"> is precisely aimed at making them tender and super flavorful. </span><b>The process is artisanal</b><span style="font-weight: 400;">, with fresh and strictly Italian ingredients, whenever possible farm-to-table, without dyes, preservatives, glutamate or chemical additives.</span></p>

The pork meat is roughly chopped to </span><b>preserve all the taste and texture</b><span style="font-weight: 400;">. The perfect combination of all the flavors &#8211; the meat, the “soffritto” (celery, carrots and onions chopped and sautéed in olive oil) in which the meat is seared, red wine and red chicory &#8211; is almost magical.</span></p>

										<content:encoded><![CDATA[<p><span style="font-weight: 400;">Traditionally, </span><i><span style="font-weight: 400;">capaccia </span></i><span style="font-weight: 400;">was a </span><b>poor product</b><span style="font-weight: 400;">, “invented” to save the less noble cuts from the pork. All the meat was coarsely cut by knife and stuffed: we are right when we say </span><b>“everything but the oink”</b><span style="font-weight: 400;">! Our statement is mainly ethical, but is also </span><b>a great opportunity to discover again</b><span style="font-weight: 400;"> the genuine taste of our tradition. And the recipe of our </span><i><span style="font-weight: 400;">capaccia </span></i><span style="font-weight: 400;">is really superb. </span></p>
<p><span style="font-weight: 400;">We only use </span><b>natural ingredients </b><span style="font-weight: 400;">and the meat of a special pig, our Grigio del Casentino, and this makes all the difference.
